Cowboy Quesadillas

I did it slightly different here's what I did....
4 cups minute rice
About 2 cups cheese
1 can each whole kernal corn and black beans
About 3/4 cups BBQ sauce (I just kinda eye balled it)
1 Super big chicken breast cooked and cubed
Threw it all together in a bowl put scoops of it onto our tortillas and grilled them on our griddle to get a bit crispy!
Mmmmm mmmm Good!
This made quite a bit I kindof think they were fun to do. You could plan on leftovers for the next day or two or freeze some in a baggie for another week. I think they would make a fun sidedish for a party or something. Anyway I hope you love them. They are just like most my other recipes easy and fast!
By the way- I've been using brown rice -can't tell much of a difference in taste and it's much healthier for us!

Yummy Ranch Noodles


Got this recipe from my sister Callie who got it from my cousin Tami. It's easy, fast, and delicious!

1 pkg. cooked noodles. (Bowtie- Rotini-whatever)
1 square butter
2 cups cooked cubed chicken (this recipe is also very good with cannery chicken)
2 cups frozen peas and carrots (I just steamed some broccoli an carrots and put in since I didn't have frozen)
2 packages of rach dressing dip.

I started by cooking my noodles while they were cooking I put my butter in another pan let it melt then added my chicken, vegetables, and dressing. Then Drained my noodles and added them. So easy!
