Cowboy Quesadillas

So here is the original link to this recipe
Check it out you'll be glad you did!
I did it slightly different here's what I did....
4 cups minute rice
About 2 cups cheese
1 can each whole kernal corn and black beans
About 3/4 cups BBQ sauce (I just kinda eye balled it)
1 Super big chicken breast cooked and cubed
Threw it all together in a bowl put scoops of it onto our tortillas and grilled them on our griddle to get a bit crispy!
Mmmmm mmmm Good!
This made quite a bit I kindof think they were fun to do. You could plan on leftovers for the next day or two or freeze some in a baggie for another week. I think they would make a fun sidedish for a party or something. Anyway I hope you love them. They are just like most my other recipes easy and fast!
By the way- I've been using brown rice -can't tell much of a difference in taste and it's much healthier for us!
It also comes in Minute rice woot woot!

I started by cooking my noodles while they were cooking I put my butter in another pan let it melt then added my chicken, vegetables, and dressing. Then Drained my noodles and added them. So easy!

Aunt Becky's Meatballs

Or Christmas Eve meatballs as some of you may know them :)
K this is the super easiest recipe ever and so so yummy!
Here is what I did
Bought a 2lb. bag of Frozen Great Value Homestyle Meatballs for $4.88
(I'm really weird and picky with my meat and they were actually really good!)
A Jar of Grape Jelly
1 Jar Chili sauce

Put 1/2 of everything in the crockpot and cooked on low stirring occasionally for about 4 hours.
You can put everything in but 1lb of meatballs was plenty for me and my family and we still have some in the fridge for leftovers! Also I still have enough stuff to fix it again in a couple weeks! So two meals for like$7 (plus my sides) Pretty cheap eh?
Served over rice and with a side of cooked broccoli and carrots.

Here is the actual recipe if your up for making your meatballs from scratch. And I'll give you the exact size of chili sauce and grape jelly it says to buy.

2lbs hamburger
1/3 c. chopped onion
2 eggs (beat in bowl then add)
2tsp salt/pepper to taste
3tsp worchestershire sauce
1 12oz jar chili sauce
1 10 oz. jar grape jelly

Mix together first 5 ingredients well in a large bowl and shape into balls. Put on cookie sheet and bake 10-15 mins on 450.
In sauce pan on stove mix chili sauce and grape jelly until melted smooth.
Place meatballs in crockpot and pour sauce over top. Cook on low 2 to 3 hours.

Mom's Chicken Marinade

Oh my heck I just had this last night and could NOT stop eating! I know I know big news for me....HA! Anyway it was so super good and even better- super easy and everyone should have all of this stuff in there fridge/pantry.
1 C. Italian Salad Dressing
1/4 C. Worchestershire
1/4 C. Soy Sauce
1 Tsp. Lemon Juice
1 Tsp. Dajon Mustard (I just used regular)
Mix together and throw in chicken to marinate.

I  halfed this for 3 chicken breast and it was more than enough! Also I only had it marinating for abou 45 mins and it was still great so if you forget to put it in in the morning or whatever you really only have to have an hour or so.

Side suggestions : Rice-a- Roni and cooked Veggies

Past Roni With Sausage

K so I know the picture looks kinda gross but it's really not. It's good.
(Oh and I promise my family really does eat things besides pasta!)

2 Boxes Pasta Roni (Shells in White Cheddar) Cook as directed
3-4 links of Johnson-ville Italian sausage cooked as directed and cut up (like a hot dog)
1 red pepper cut and diced (throw in with the sausage or the noodles during the last few minutes of cooking just to get it warmed up)
Mix all together and enjoy!

Grandma Phyllis' Corn Puffs

I forgot to take a picture but these are really yummy and fun for something different.
The sweet and salty is to die for!
Not very healthy but very tasty :)

2 1/2 C. Sugar
1/2 C. Water
1/4 C. Karo Syrup
3 Cubes Butter
Cook to hard ball stage, poor over one large bag corn puffs, and mix until coated.
(My Grams used to have these honkin huge bags and I guess you can only get them around Christmas time so I just halfed it and used a regular size bag like the size of a bag of chips....

Easiest vegetable soup ever!!

K first of all, people you need to start posting!!! I need new ideas!! Now get on with it.

With that being said, ha ha, this recipe is so easy and so good.

Vegetable soup (sorry forgot to take a pic).

Start off by browning the meat. I used round steaks and cubed it up. You can also use shredded roast, or other forms of meat you might like. Anyway, brown it with salt, pepper, and dried onion.

Add 8 cups water and 8 beef cubes ( I added 10 cubes to 8 cups water because I like it more flavorful). Add 1 small can tomato sauce, bring to boil.

Turn down and let it simmer for about 20 minutes just to finish cooking the meat and get it tender.

Then I added 4 potatoes (peeled and cubed), about 2 cups mixed veggies ( I just bought the bag of mixed veggies), and about 1 cup of spiral noodles (uncooked). Turn it on low and cook till noodles and potatoes are done, stirring as needed. Also add sale and pepper to taste.

Serve with crackers or rolls. SO GOOD!!! And SO EASY!!!

Fruit dip (1 ingrediant required)

This is a yummy recipe I just came across. It is so easy and a much healthier alternative to carmel dip. All you need is a can of sweetened condensed milk (I bought fat free). You put the can of milk in a seperate pan (I used a round cake pan). Cover it with foil and then place it in another pan. In the other pan fill it with hot water untill it reaches the half point of the cake pan. Place it in the oven at 425 for 1 to 1.5 hours. Or untill carmelized. Stir and serve warm, or put it in the fridge and eat later. Also save it for another day, it stays good for a while. We love dipping apples, strawberries, bananas, etc. It's a great afternoon snack or desert and it incorporates healthy fruit. Baylee loves dipping and this way she gets her servings of fruit in. Enjoy!!
If it is not carmelized, just put it in the oven longer untill it carmelizes. You have to kinda stir it and whip it to get some lumps out, but then it is delicious!!

Tiny Spicy Chicken

All time FAVORITE recipe of mine. It's so so yummy! Got it from my mom who got it from Aunt Becky.
It sounds complicated but it's not-it's just kind of time consuming.
4 chicken breasts thawed and cubed
2 eggs beaten
Cornstarch
I usually set mine out like this so it's all a step by step process.
Dip handfuls of chicken into your egg and then roll in cornstarch. Lay onto plate.

 Deep fry.
I usually do half of my chicken and start frying-then dip and roll the other half because if you wait to long to start frying it the cornstarch starts coming off. After preparing the second half I throw it in with the first chicken.

Fry until crisp and somewhat brown but not to brown or it get's to over cooked.
In saucepan mix together
3/4 Sugar
4 Heaping TBLS Cup Ketchup
1/2 C. Vinegar
1 T. Soy sauce
Heat and stir until dissolved.

Place chicken in 9x13 (lined with foil) and pour sauce over top. Bake at 325 for 1 hour. Stirring every 15 minutes to make sure all chicken is evenly coated!

 Serve Over Rice
ENJOY!

Bow-tie Pasta

Super easy, fast, and delicious! For all  you pasta lovers out there!
1 12 oz box bow-tie (or any other type pasta)
Cook according to directions
While cooking Pasta put following ingredients into saucepan
1 8oz. cream cheese
1 Square Butter
1 Cup Milk
1 TBL Lemon Juice
1 Tsp Garlic Salt
1 Tsp Onion Salt
1/4 C. Parmesan Cheese (if desired)
1 bag freezer chicken, or 1- 2 cups diced cubed chicken.
Add cooked/drained pasta to sauce and serve!
Tip: Sometimes I have also added cooked broccoli to add some color and veggies!
Suggested sides: garlic bread or bread sticks and green salad.

Orange Almond Punch

K- so I haven't tried this yet but I plan too. And I thought it's really still pretty chilly in Idaho so you all might want to to. It's kindof like a cider I guess. Anyway I was reading the cutest romance novel the other day (Do any of you read Marcia Lynn McClure? If not you should-she is a wonderful author. She is LDS and all of her novels are just so fun and *clean* and I love a good romance novel but don't trust many authors but hers are perfect!) Ok onto the punch anyway the people in the book made this drink all the time so I'm very excited to try it :)

Yes I know they are fictional but I can use my imagination

Orange Almond Punch

Ingredients:

3 quarts of water
2 cups of sugar
1 16oz. can of frozen orange juice concentrate
3 T. lemon juice
1 t. vanilla
1 t. almond extract
In a large saucepan or pot, heat the water and sugar to a boil.  Boil until sugar is disolved.  Add everything else, heat through once more and serve!   Mmmm!  Delicious!  (It’s actually good cold, too!)

For beef stew: I forgot to say, if it's too runny you may add up to 1 cup milk, if it's too thin you may add corn starch and water, ours was a bit too thick, I should have added milk.

Beef stew

Ok, so this pic does not look good, but it tasted pretty good, I promise.

In crock pot add:
1 small can cream mushroom soup
1 small can cream cellery soup
1 package dry onion soup mix

Mix this together then add:

2 lbs stew meat, browned
2 cups chopped potatoes
20 baby carrots cut into 3rds

The recipe says to cook on high for 4 hours, then cook on low for 6, but I started out on high and after 4 hours my potatoes were starting to go a little mushy because they were over done, so I would recommend maybe cooking it on low for 6 hours, just go by what your crock pot does.

For the last 20 mins, add 1 cup frozen peas.

ENJOY, may serve with hard rolls.

Pork tacos

Pork Tacos
I have to give Kate all the credit for this yummy, EASY recipe. I got it from her.

Put a bonless, skinless pork roast in the crock pot with 1 c. picante salsa and 1 c. brown sugar.

Cook on low for 3 hours, take out, cut into 3rds, cook on low 2 hours, take it out shred it, and cook for 1 more hour.

It's ready to go, you can serve it in taco shells or tortillas. Put your favorite toppings on it, cheese, lettuce, sour cream, salsa, guacamole, etc.

I put a spoon of white minute rice under my meat, you may put refried beans, black beans, etc. under it if you would like, or just eat it plain.

Also Kate deep fries her corn tortillas in veg oil and a little bit of garlic salt. This is very good, but it is also good on tortillas just warmed up or baked if you want to go the more healthier route.

ENJOY!!!
